Holland America Line Launches Morimoto By Sea Sushi Bar

Holland America Line is set to unveil a dedicated Morimoto By Sea sushi bar across five of its ships, featuring a menu curated by Global Fresh Fish Ambassador Chef Masaharu Morimoto.

This new venture builds on the current Morimoto By Sea pop-up concept and the stand-alone restaurant found on the Nieuw Amsterdam.

The new sushi bar will accommodate 12 guests at a time, with extra table seating available on the Rotterdam, Koningsdam, and Nieuw Statendam. The Eurodam will feature a sushi counter encircled by seating. While the Nieuw Amsterdam introduced the concept in 2023, the rollout on the other ships is scheduled to occur between March and June 2025. Guests with existing bookings have the option to make pre-cruise reservations.

“With Chef Morimoto’s knowledge and expertise in the sushi world, it made sense for him to expand beyond his Morimoto By Sea restaurant and develop a specialized sushi bar featuring his signature style and flavors,” said Michael Stendebach, vice president of food, beverage and rooms division for Holland America Line. “We’re excited to extend our fresh fish options and give our guests access to another specialty venue with cuisine by such a renowned chef.”

The Morimoto By Sea sushi bar menu, launching in March 2025, will feature items such as:

Appetizers • Toro Tartare – Wasabi, nori paste, sour cream, chives

Sushi & Sashimi • Chef’s Combination – A selection of sushi and sashimi •

Nigiri & Sashimi – Seasonal white fish, maguro tuna, sake salmon, hamachi yellowtail, kampachi amberjack, unagi freshwater eel, hotate scallop, ebi shrimp, tako octopus, ikura salmon roe, otoro fatty tuna, chutoro medium fatty tuna

Chef’s Signature Rolls • Shrimp Tempura – California roll, tempura shrimp, gochujang aioli • Lobster Tempura – Tempura lobster, avocado, romaine lettuce, tobiko, cucumber, scallion • Tako Yaki – Tempura octopus, cabbage, tonkatsu sauce, mayo, bonito flakes • Aburi Salmon – Salmon avocado roll, spicy mayo, torched • California – Snow crab, cucumber, avocado • Spicy Tuna – Tuna, scallion, spicy sauce • Spicy Salmon – Salmon, scallion, spicy sauce
